
As I alluded to in my last post, due to some personal (good, but personal) stuff I’ve not been posting as much. However, despite the whirlwind of the last few weeks, nothing reminds me to slow down more than appreciating a great meal.
If you’ve been on my blog or Instagram, you already know I’m a foodie. I love talking about food, trying new recipes, experiencing new restaurants, etc. With all that being said, I love being surprised by how good a simple and easy-to-make meal could be.
Last night I decided to whip up something relatively easy and fried some Italian chicken cutlets. Just the normal egg, breadcrumbs, and oil routine — but a classic nonetheless.
Then I watched a Tik Tok about lemons. (Look, I’m on a weird side of Tik Tok so don’t come for me in the comments.) The lemon video had me really craving, like, a lemon vinaigrette? And the idea of arugula sounded amazing. I had a few lemons around and a ton of olive oil so I made this insanely easy dressing and tossed the arugula in it with some diced tomatoes and cukes from the garden. (*Dressing: 1/2 c. olive oil, juice of two lemons, salt and pepper, 1/2 tsp dried oregano, 1/2 tsp sugar, one grated garlic clove*)
I plated the fried cutlets and topped them with the arugula salad. Then, because I was feeling fancy, I shaved some Locatelli shreds on the top.
Guys, when I tell you this was an insanely delicious meal…
And look, I know it sounds ridiculous to get on this blog and write about a salad, but really enjoying this meal when I wasn’t really expecting it made my week. Frankly, I hope something as simple as sharing a delicious salad with my family always makes me this happy.
