A few weeks ago I published a recipe very similar to this one that included Greek yogurt and shallots. However, after a few more trial runs with the recipe, I decided that the new one I am posting below is better. I hope you enjoy!
- 2 lbs raw shrimp
- 1 c. chopped cilantro
- 1/2 c. minced garlic
- 2 tbs minced sweet onion
- 2 green onions, sliced
- 1 stick (8 tbs) butter
- 1 tsp lime zest
- Juice of one lime
- 1 tsp red pepper flakes
Melt the butter in a pan and add the cilantro, garlic, sweet onion, green onion, lime zest and red pepper flakes. Sauté the vegetables and herbs together until very aromatic on medium heat. Do not let the garlic burn.
Add the lime juice and sauté for another minute.
Add the shrimp and cook throughout, about 7-10 minutes. (It really depends on how cold the shrimp are when you begin cooking.)
That’s it! Enjoy over cilantro-lime rice with pineapple salsa.
