Easy Corn Salad Recipe
Corn salad is one of my favorite side dishes for a few reasons. First, it is delicious and beautiful. This salad has a great combination of unique flavors, and all of the ingredients are so colorful and really pop on any dish. It’s sweet, savory, bright, fresh, and even somewhat spicy. Secondly, it is ridiculously easy to make. You literally just throw all of the ingredients in a bowl and mix them up. Thirdly, corn salad allows me to use just about anything going bad soon in my refrigerator, and lastly, you can make it your own!
Ingredients
- 5 ears of corn, roasted or boiled and cut from the cob
- 1 small shallot, finely diced
- 4 mini sweet peppers, finely diced
- 2 radish, finely diced
- 1 small tomato, diced
- 2 tbs fresh parsley, chopped
- 1/4 c. fresh cilantro, chopped
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp sugar
- 2 tbs olive oil
- 2 juiced limes
Directions
Once all of your ingredients are chopped, place them all in a bowl with the spices, juice, and olive oil. Combine the salad until everything is married. That’s it.
I wasn’t lying when I said this was easy! Again, you can make this recipe your own, too. If you like jalapeño, add it! If you don’t like cilantro, add less or forget it all together. Don’t have radish? No problem. This recipe can really be made any way as long as you have fresh veggies and a little time. I like this corn salad with Mexican food, barbecue, and even just grille chicken. It is so flavorful and easy to make!
